Bran Muffins  
     
 

Ingredients:
1 carton Egg Beaters (equals 4 eggs)
1 cup applesauce
5 teaspoons Baking Soda dissolved in 2 cups Boiling Water
1 qt. Low Fat Buttermilk
2 cup 40% Bran Flakes
4 cup High Fiber All Bran
1 cup Raw Bran
5 cup Flour
Raisins, dates, nuts to taste, up to 2 cups of each
1 cup white sugar
1 cup brown sugar



Preparation:

Mix all ingredients together, pour into container with well sealing lid and refrigerate for 24 hours before baking. Bake at 350 degrees in large or regular size muffin tins, about 30 minutes for large size, or until a toothpick comes out clean.
